Day 7: Vegan Challenge
I did it!!! I made it an entire week eating completely Vegan and you know what? I’m not stopping there. I am going to continue on to see if I can make this a permanent change.

I’ve almost made it an entire week and I have stuck to a completely vegan diet! I definitely need to do some more research on recipes, health, etc…but I’m thinking I want to try and stick with this. Day 4: Vegan Challenge
Made it through another day easy peasy - YAY! I haven’t really felt that I have been missing out on anything because the food I have been eating has been SO good.

Day 2: Vegan Challenge
I woke up this morning feeling slightly peppy. It could be psychosomatic, but for a Monday, that’s really saying something. I got to work and was so excited to have my soy yogurt sprinkled with almonds for breakfast.
I took one bite and thought to myself “tastes a little odd, but probably because I’m used to regular yogurt” so I took a second bite and nearly threw up....
